Hi there! I’m Misty Hoffman, a small-town beekeeper residing in River Falls, Wisconsin. My beekeeping journey began in 2016 with the unlikely help of my beautiful, chubby cat—Carl (yes, she’s a girl). What started as a curious hobby quickly blossomed into a deep love for bees and the art of beekeeping.

Today, I’m proud to sustainably raise happy, healthy bees while sharing the sweet rewards with my local community. I’m currently studying to become a Master Beekeeper through the University of Montana, deepening my knowledge and commitment to responsible hive management.

Fat Cat Honey operates across six bee yards throughout St. Croix County—River Falls, Roberts, Hudson, New Richmond, Star Prairie, and Clear Lake. Each yard offers its own unique floral landscape, and I keep the honey from each location separate to preserve its distinct character. I never blend my harvests, because I believe every jar should reflect the time, place, and season it came from.
